NATURAL SHEEP CASINGS
This is our best selling product. Ceter Casings's specialty has always been natural sheep casing. Natural Casing is a specialty in the meat sector and natural sheep casing is a specialty within the Natural Casing industry.

Natural sheep casing is a quality casing with a smaller diameter and is used in the finest meats. The best known products are fresh sausage, frankfurters, red sausage, Eastern sausage, the bockwurst and Nurnberg sausages to name a few.

These casings combine tenderness with sufficient strength to withstand the filling, cooking and smoking processes.

The color ranges from white to grey depending on the origin, but this variation in colour does not indicate any difference in quality, strength, capability of smoke penetration, not even microbiological characteristics.

The characteristics of the natural sheep casing like texture, strength, workability, elasticity, length of the strips, lubricity and moisturizing ability depend largely on its origin.

 
QUALITIES

Sheep casing is divided into 3 grades, depending on its strength.

Grade A: Very strong and with either very fine pores or no pores. It resists the strain of cooking easily. It does not usually give any problems with breakages.

Grade B: Resistant enough even in the most modern machines with small pores that withstand breakages when the demands placed on it are not too high.

Grade C: Usually porous casing requires more care and time in the stuffing process. There is also an additional category of Shorts, made with short pieces which are usually less than 2 meters long

Depending on the products, there are intermediate grades of AB or BC which are a combination of the two grades mentioned.

The hank specifications indicate the total length, the minimum length of the pieces and the maximum number of ends that are included.

PACKAGING

In CETER Casings we can prepare the sheep casing according to the requirements of our customers: Hank salted, in brine, bagged, in nets and flexible or rigid tubes.

In recent years CETER Casings has perfected the production of tubing, making it a new specialty of the company.

We have the most modern machinery in the preparation of spooled casing on pipes. We adapt to the individual requirements of our clients and prepare the casing on flexible or rigid tubes, overlapping each other or with separators. This way our customers improve productivity in the stuffing process.
